Stray away from the traditional gold sweet potato to this purple sweet potato pie! It'll be a hit! This southern pie is creamy with the evaporated milk and delicious with its crispy crust. You will LOVE it! Happy baking in your rice cooker!
EASY RICE COOKER CAKE RECIPES: Southern Sweet Potato Pie Recipes from Scratch
INGREDIENTS:
• 1 1/2 cup (250g) MASHED SWEET POTATOE
• 1/3 cup (95g) UNSALTED BUTTER (melted)
• 1/2 cup (125ml) EVAPORATED MILK
• 1/4 cup (50g) SUGAR (any kind)
• 1/4 cup (50g) BROWN SUGAR
• 1 tsp (4g) VANILLA EXTRACT
• 2 EGGS
• 1/2 tsp GROUND CINNAMON
• 1/4 tsp GROUND NUTMEG
• 1/8 tsp GROUND GINGER (a pinch)
• 1/8 tsp GROUND CLOVES (optional, a pinch)
• 3 tsp (23g) ORANGE JUICE (or pineapple)
• 1 tbsp (5g) ALL PURPOSE FLOUR
• 1/2 tsp VOILET FOOD COLOR (optional)
CRUST INGREDIENTS:
• 1/4 cup (60g) UNSALTED BUTTER (room temp)
• 1/2 tsp BROWN SUGAR
• 1/8 tsp SALT (a pinch)
• 1/2 cup (75g) ALL PURPOSE FLOUR
• 3 tbsp (20g) COCONUT FLOUR (see notes)
HOW TO:
1. Clean, peel and steam or boil your sweet potato until cooked. Drain and let it cool
2. After the potatoes are cooled mash it with a fork as much as you can. Transfer to a large mixing bowl
3. Add melted butter, milk, sugar, brown sugar vanilla extract and eggs. Mix for about 2 to 3 minutes to puree the potato more
4. Now add the cinnamon, nutmeg, ginger, orange juice, flour and mix for another minute.
5. Add the food coloring if you like, then mix for 30 seconds.
6. Line your rice cooker with two long parchment paper. This will make it easier to remove your pie later.
7. For the crust, you can use any pre-packaged raw crust. Or make this easy version. Add all ingredients into a bowl and mix with a fork. NOTE: gradually add 1 tablespoon of coconut flour (or all purpose flour) if your crust mixture is still too wet. Mix until it's crubmly.
8. Use your hand to flatten the crust dough onto the bottom of the rice cooker.
9. Pour in your batter and 2 COOK cycles (1 hr) then check. Bake more cycle until tester comes out clean. Mine was baked for 3 cycles ( 1 hr 30 min)
10. Cool for 1-2 hours for the pie to set before cutting. Enjoy!
OVEN BAKING:
Bake in pre-heated oven of 350F (175C) for 30-40 minutes. Ovens varied so check at about 35 minutes and bake longer if needed.
