Bake something different! Try this kiwi cake with wheat flour and cream cheese frosting for a change. You can substitute the eggs for mashed bananas to make this "no egg" and use "vegan yogurt" to meet your diet requirements. The cake is tasty by itself but even better with the frosting. Happy baking in your rice cooker!
EASY RICE COOKER CAKE RECIPES: Easy Kiwi Cake Recipe with Cream Cheese Frosting
INGREDIENTS:
• 1 cup (150g) WHEAT FLOUR
• 1 cup (130g) ALL PURPOSE FLOUR
• 1 tsp (4g) BAKING SODA
• 2 tsp (6g) BAKING POWDER
• 2 LARGE EGGS (subs 1 cup mashed bananas)
• 3/4 cup (150g) FINE SUGAR
• 1/2 cup (125ml) VEGETABLE OIL
• 2 tsp (6g) VANILLA EXTRACT
• 1/4 cup (60g/60ml) VANILLA FLAVOR YOGURT
• 1 cup (215g/250ml) PUREED KIWI (about 4 kiwis)
CREAM CHEESE FROSTING (optional):
• 8 oz (225g) CREAM CHEESE, at room temperature
• 1/4 cup (57g) UNSALTED BUTTER, at room temperature
• 1 cup (125g) POWDER SUGAR, icing sugar
• 1 tbsp (13g) VANILLA EXTRACT
• 2 KIWIS (optional, sliced)
HOW TO:
1. In large mixing bowl, add eggs, sugar, oil, vanilla and yogurt, then mix for about 1 minute or until sugar is dissolved. Add pureed kiwi and give a quick mix
2. Sift in dry ingredients and mix until incorporated, about 30 seconds
3. Line pot and Bake for 4 COOK cycles (check after 3 cycle). Bread is done when toothpick comes out clean
4. Let it cool for 30 minutes before cutting. If frosting, let it cool for 1 hour before frosting. Decorate with sliced kiwi
OVEN BAKING:
Bake in pre-heated oven at 350F (180C) for 35-45 minutes. Ovens vary so check at 35 minutes and bake longer is needed.
