EASY RICE COOKER CAKE RECIPES: Coconut Cake Recipe from Scratch with Cream Cheese Frosting
INGREDIENTS:
• 1 1/2 cup (220g) ALL PURPOSE FLOUR
• 1/2 tsp (4g) SALT
• 3 tsp (12g) BAKING POWDER
• 1/2 cup (100g) FINE SUGAR, Caster sugar
• 5 tbsp (35g) SHREDDED COCONUT, desiccated coconut
• 1/2 cup + 2 tbsp (150ml) COCONUT OIL, unrefined cold pressed
• 2 EGGS
• 1 tsp (4g) VANILLA EXTRACT, or coconut extract
• 1/2 cup (120ml) COCONUT FLAVOR YOGURT, or any flavor that pairs well with coconut
• 1/3 cup (80ml) COCONUT MILK
FROSTING (optional):
• 8 oz (225g) CREAM CHEESE, at room temperature
• 1/4 cup (57g) UNSALTED BUTTER, at room temperature
• 1 cup (100g) POWDER SUGAR, icing sugar
• 1 tbsp (13g) VANILLA EXTRACT
• Optional Topping SHREDDED COCONUT
HOW TO:
1. Sift flour, baking powder and salt into a bowl
2. Mix sugar, shredded coconut, coconut oil, eggs, vanilla extract, yogurt and coconut milk until smooth
3. Sift flour mixture a second time into the wet batter and use a spatula to mix until combined
4. Lined rice cooker with baking paper and carefully pour batter in
5. Bake cake for 3 bake cycles, or until chopsticks or toothpick comes out clean
6. Cool for 1 hour or longer before cutting or frosting
7. Beat frosting ingredients until smooth and creamy
8. Frost cake to your desire and top with additional shredded coconut
OVEN BAKING:
Bake in pre-heated oven of 350F or 180C for 40-50 minutes. Check at 30 minutes to ensure you do not over bake it.
