If you love mochi and brownies? Then you will love this recipe! Chewy and chocolatey with just the perfect level of sweetness. Plus it is gluten free and so easy to make in no time. With no eggs, milk or butter, vegans and vegetarians can use appropriate vegan ingredients for a tasty treat as well. Enjoy!

Easy Gluten Free Brownies From Scratch | Without Eggs | No Butter | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 2 tbsp (8g) COCOA POWDER
• 1/2 cup (125ml) HOT WATER
• 3 tbsp (45g) COCONUT OIL (vege oil)
• 1 cup (135g) GLUTINOUS RICE FLOUR (sweet rice flour)
• 1/2 cup (100g) SUGAR (see notes below)
• 1/4 tsp (2g) BAKING SODA
• Pinch of SALT
• 1 tsp (5g) VANILLA FLAVOR
• 1/4 cup (45g) CHOCOLATE CHIPS (see notes below)

NOTES:
• Sugar - use 1/3 cup (80g) if using sweetened chocolate chips
• Chocolate Chips - semi-sweet chocolate chips, chocolate chunks; optionally mix half of the chocolate chips into the batter and top with half

HOW TO MAKE IT:
1. In large mixing bowl, mix cocoa, hot water and oil until cocoa has melted
2. Add flour, sugar, baking soda, salt and vanilla flavor. Mix until combined. Batter will be thick. If you use vegetable oil, your batter may be a bit runnier than mine but it will still be ok
3. Pour into lined pot/pan and top with chocolate chips. Optionally, add half of the chocolate chips into the batter and top it with the other half
4. Bake for 1 bake cycle (30 min) and check. Mine took 2 bake cycles (60 min). Rice cooker varies so check and bake longer as needed
5. Cool for 15-20 minutes and consume it warm or at room temperature. I stored mine in the refrigerate, in a seal tight container and just microwave for 5-10 seconds. Soft and chewy!

OVEN BAKING:
Bake in pre-heated oven of 350F (175C) for 25-35 minutes. Ovens varied so check around 30 minutes and bake longer as needed. You may get a crisp top but that's expected.
