This recipe list vegan ingredients but if you are not vegan? You can use your regular ingredients and it will still turn out just fine too. This cake is a bit sweeter than my usual desserts. If you want it less sweet, cut back on the sugar. It's so easy yet, so delicious! Happy baking in your rice cooker!

EASY RICE COOKER CAKE RECIPES: Vegan Banana Upside-Down Cake

INGREDIENTS:
• 1/2 cup (120ml) ALMOND MILK, any vegan milk
• 2 tsp (10ml) LEMON JUICE
• 1/2 cup (115g) VEGAN MARGARINE, or butter
• 1/2 cup (100g) PURE BROWN SUGAR
• 5 medium SLICED BANANAS, sliced length wise and cut in half
• 1 cup (140g) UN-BLEACHED ALL PURPOSE FLOUR
• 1/2 cup (100g) NATURAL SUGAR
• 2 tsp (8g) BAKING POWDER
• Pinch of FINE SEA SALT
• 1/2 cup (113g) MASHED BANANAS, about 2 medium bananas
• 3 tbsp (45ml) COCONUT OIL
• 2 tsp (10ml) PURE VANILLA EXTRACT
• 1/3 cup (77g) ALMOND YOGURT, any vegan yogurt


HOW TO:
1. Mix lemon juice with milk and set aside
2. Melt margarine in the rice cooker for about 1 minute
3. Add brown sugar and stir to melt
4. Slice 4 bananas along the long side then cut the slices in half
5. Line the sliced bananas on top of the brown sugar in the pot, covering as much of the brown sugar as possible
6. Slice a 5th banana and sporadically line the side of the pot, standing the slices vertically
7. In a bowl, add flour, sugar, baking powder and salt, mix to incorporate
8. In another mixing bowl, add masked banana, oil, vanilla, yogurt and milk, whisk together until blended
9. Add flour mixture to wet mixture, use a spatula to fold the dry ingredients in until blended
10. Pour the batter into the rice cooker, on top of sliced bananas
11. Fold vertical sliced bananas down if it extends higher than the batter
12. Bake for 2 cycles or about 1 hour (check after 2nd cycle, if needed, bake a 3rd cycle)

OVEN BAKING:
Bake in 350F or 175C oven for 30 - 40 minutes, until center is set, check using toothpick or chopstick
