This healthy oatmeal carrot bake is between a carrot cake and carrot oatmeal cookie. It's more dense then a cake and not crispy like a cookie. Plus, it's not too sweet for my taste! It's a perfect healthy snack any time! And oh so easy. Happy Baking in your rice cooker!

EASY RICE COOKER CAKE RECIPES: Healthy Oatmeal Carrot Cookies? or Bake?

INGREDIENTS:
1 cup rolled oats
3/4 cup flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/8 tsp salt
2 tbsp coconut oil
1 egg, room temperature
1 tsp vanilla
1/2 cup honey (1 cup if you like it sweet)
3/4 cup shredded carrots

HOW TO:
1) Mix dry ingredients in a bowl, using spoon
2) Mix wet ingredients in a separate bowl with wire whisk
3) Combine dry and wet ingredients, mix well, then add carrots
4) Cover batter with plastic wrap and cool in the refrigerator for 30 minutes to 2 hours. This allow the oats to absorb the liquid.
5) Grease rice cooker and pour in batter
6) Cook for 2 cycles (about 1 hour)
7) Cool and DEVOUR!

NOTE:
You can double the recipe but I would not advice tripling as it will take longer to bake in the rice cooker.
