Thai Tea Dessert Recipes | How To Make Leche Flan In Rice Cooker | EASY RICE COOKER RECIPES

NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1.8 litre or 10 cups
* Important BAKING TIPS & GUIDELINES at the end of each video

INGREDIENTS:

THAI TEA BREW
• 4 tbsp (25g) THAI TEA LEAVE
• 1 cup (250ml) HOT BOILING WATER

CARAMEL
• 1/3 cup (60g) CANE SUGAR (or brown sugar)
• 2 tbsp (30g) WATER

FLAN
• 2 EGGS
• 1 tsp (6g) VANILLA EXTRACT
• 1 1/4 cup (310ml) EVAPORATED MILK
• 1/4 cup (60ml/75g) SWEETENED CONDENSED MILK
• 1/4 cup (60ml) BREWED THAI TEA

HOW TO MAKE IT:
1. Brew Thai tea by adding hot water and let it steep for 15 minutes or longer
2. Caramelized the sugar and water in a baking pan; that will fit inside of your rice cooker inner pot. Do this over stove top with medium heat or inside the rice cooker heating pad (see video). If using a separate non-stick pot/pan to caramelize the sugar, quickly pour it into the baking pan while it is still very hot. This will harden fast
3. Whisk together the flan ingredients until well mixed
4. Slowly pour flan batter through a fine mesh sieve, into the baking pan, staying as low to the caramel as possible. This remove larger chunks and prevent too much bubbles
5. Cover baking pan with aluminum foil
6. Place a trivet inside the rice cooker inner pot and pour in 1 cup (250ml) of water
7. Place the baking pan on top of the trivet, cover and press COOK/ON
8. The rice cooker will stay on COOK status until the water is completely evaporated. My rice cooker takes about 20 minutes for this process. So, set a timer or watch closely
9. Once it goes into WARM status, do NOT open the rice cooker pot. Just UNPLUG the rice cooker and let it sit for 30 minutes. Then check the flan. Mine didn't seem cooked or set after one bake cycle so I did another bake cycle. Rice cookers do varied so you may need to do this two or three times
10. After the flan is cooked (set or top loosen from sides), let it cool completely at room temperature then chill for 4 hours or more
11. Loosen the sides with a knife or spatula and flip it onto a serving plate. Enjoy!

STOVE TOP STEAM:
Steam for 45 minutes then check. Steam longer as needed

OVEN BAKING:
1. Pre-heat oven to 350F (180C)
2. Carefully place a pan of hot boiling water on the lower rack of your oven
3. Then place the flan pan on the next rack up. OR place flan pan inside a bigger baking pan; then pour hot boiling water into the bigger baking pan; about 2 inches. Make sure the water do not spill into the batter pan. Place this into the oven
4. Bake for 45-60 minutes. Ovens varied so check about 45 minutes and bake longer as needed
