Peri Peri Chicken Wings and Rice
Continuing the theme from my last video on peri peri chicken, I now demonstrate how to cook peri peri rice.
I also used the rest of the peri peri sauce and marinade to cook up some delicious lip-smacking peri peri chicken wings.

Peri peri sauce and marinade recipe:
1 sweet red capsicum pepper, chopped
4-8 red hot chilli peppers (4 mild - 8 hot)
1 head of garlic, peeled and roughly chopped
250ml olive oil
Juice of 1 lemon
4 tbsp vinegar
2 tbsp paprika powder
1 tbsp cayenne pepper powder
1 tsp dried thyme or 1 sprig of fresh thyme
1 tbsp salt
1 tsp ground black pepper
Blend all the ingredients until you have a smooth sauce.
Use 1 cup of sauce to marinade each kilogram (2.24 lbs) of chicken.
Transfer remaining sauce to a sterilised jar or bottle.
This sauce/marinade will keep for up to 6 weeks in the fridge.
