How to Cook Peri Peri Chicken

Peri peri or piri piri chicken has been highly popularised by the very popular Nando's restaurant chain. In this video I demonstrate my recipe for peri peri sauce/marinade and its use in making my version of oven roast peri peri chicken.

Peri peri sauce and marinade recipe:

1 sweet red capsicum pepper, chopped
4-8 red hot chilli peppers (4 mild - 8 hot)
1 head of garlic, peeled and roughly chopped
250ml olive oil
Juice of 1 lemon
4 tbsp vinegar
2 tbsp paprika powder
1 tbsp cayenne pepper powder
1 tsp dried thyme or 1 sprig of fresh thyme
1 tbsp salt
1 tsp ground black pepper

Blend all the ingredients until you have a smooth sauce.

Use 1 cup of sauce to marinade each kilogram (2.24 lbs) of chicken.

Transfer remaining sauce to a sterilised jar or bottle.

This sauce/marinade will keep for up to 6 weeks in the fridge.
