In this video I demonstrate how to cook a Christmas festive ham, glazed with honey and mustard and studded with cloves. This has been my standard festive baked ham recipe for as long as I can remember.

The tradition of the clove-studded glazed baked ham in this pattern, is to represent the skin of a pineapple. For many years the pineapple was a sign of wealth and status, because only very few Victorian kitchen gardens were able to grow pineapples, and then only at great expense!

A lot of stately homes in the UK have pineapple shaped finials on their gateposts and garden walls, this was once a status symbol to show their ability to put pineapple on the table.

The practice continues to this day, but now fresh pineapple is widely available it is no longer the status symbol it once was: https://haddonstone.cachefly.net/sites/default/files/Pineapple_and_Base-E590-A_0.jpg
