No oven does not mean no pumpkin pie! I use my rice cooker to bake it! It's heavenly! For those living in Thailand, I bought my can Libby's Pumpkin Pie at Villa. And I adjusted the sweetness level down a bit, for my taste. Happy baking in your rice cooker!

EASY RICE COOKER CAKE RECIPES: Pumpkin Pie Bar

PUMPKIN PIE SPICE
1/4 cup ground cinnamon
2 tablespoons ground ginger
2 teaspoons ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground allspice (optional)

INGREDIENTS
1 can (15.5 oz.) pack pumpkin
1 can (12 oz.) evaporated milk
3 large eggs
1/2 cup sugar
1/4 teaspoon salt
1 tablespoon pumpkin pie spice
1 cup unsalted butter
1 cup pecans , chopped
1 or 1/2 package white/yellow cake mix

INSTRUCTIONS
1) Mix Pumpkin Pie Spice ingredients
2) Grease and flour rice cooker and set aside.
3) In a bowl, combine pumpkin, milk, eggs, sugar, salt and pumpkin pie spice. Pour into the prepared rice cooker.
4) Gently sprinkle the cake mix powder over the pumpkin mixture top with pecans.
5) Drizzle melted butter over the cake mix & pecans layer.
6) Bake for 3 Cook Cycle (about 1 and 1/2 hour)
7) Cool completely cut into squares

BONUS
If Baking...
*Preheat oven to 350 degrees
*Bake 25 minutes uncovered.
*Cover with foil and bake an additional 25 minutes.
