This mango coconut upside down cake is super moist and delicious! I love the combination of flavors! Plus, adding a touch of ground flax seeds to make it a bit guilt-free to indulge in this goodness! The sweetness level was perfect for my taste! Love love love it! Happy Baking in your rice cooker!

EASY RICE COOKER CAKE RECIPES: Mango Coconut Upside Down Cake

INGREDIENTS:
2 1/2 cups sliced mango
2 1/2 cups cubed mango
2 1/4 cup all purpose flour
1/2 cup ground flax seeds
4 teaspoons baking powder
1 teaspoon salt
4 tablespoons unsalted butter
8 tablespoons unsalted butter, melted
1/4 cup brown sugar
1 1/2 cup unsweetened shredded coconut flakes
1/2 cup sugar
4 small or 3 medium eggs
1 teaspoon vanilla extract
1/2 cup evaporated milk or whole milk
1/2 cup coconut milk

HOW TO:
1) Sliced 2 1/2 cups mango
2) Cube 2 1/2 cups mango
3) In a bowl, mix flour, ground flax seeds, baking powder and salt
4) Put 4 tablespoons of butter in rice cooker then turn it on to melt it. Add the brown sugar, stirring to mix and melt the sugar a bit. Unplug the rice cooker.
5) Spread sliced mango on top of the brown sugar, spreading evenly on top
6) Sprinkle 1/2 cup of shredded coconut flakes on top of sliced mango, then set the pot a side.
7) In a separate bowl, mix sugar, melted butter until blended then add eggs and mix well. Add vanilla extract and mix
8) Add half of the flour mixture into the egg mixture and mix well
9) Add milk and coconut milk, then mix some more
10) Add all the flour mixture and mix until smooth
11) Fold in cubed mango with spatula, then add 1 cup of shredded coconut flakes
12) Evenly pour batter into rice cooker
13) Bake for 3 or 4 cycles, check after 3 cycles to see if your cake is done
14) Cool for 30 minutes, then turn upside down onto a plate

NOTES:
My rice cooker actually stayed on COOK for 15 minutes on the first cook and 10 minutes on the second cook. I believe it did that because there was more liquid in this cake. And, it needed a longer wait time in between for it to cool down, about 40 minutes instead of 30 minutes. Yours may be different. Just check after the third cook cycle.
