Apple Fritters
Ingredients
• 1 c. Eleanor’s Bread Flour
• ½ tsp. salt
• 1 tsp. baking powder
• ½ c. sugar
• ½ tsp. cinnamon
• 2 eggs
• 1/3 c. milk or coconut milk for dairy free
• 1 T. olive oil
• 2 apples, peeled, sliced, and diced
• oil for fryer or deep frying pan

Powdered Sugar Glaze
• 1 c. powdered sugar
• 2 T. water or milk
• Whisk the milk or water and powdered sugar together until the desired drizzling consistency.
Instructions
1. Using a whisk, combine flour, salt, sugar, cinnamon and baking powder. Whisk in eggs, milk and butter. Fold in apples.
2. Heat oil in fryer or pan to 375 degrees F. With long handled ladle, ladle about 1/4 cup batter into hot oil. Cook for about 2 on each side, then take them out using two forks. Pull the fritter open to access the raw inside, then put back in for another minute or two. Remove fritters from oil. Quickly drain on paper towels or newspaper. Then drizzle glaze on top of the fritters.
