Super moist, healthy and delicious zucchini banana bread from your rice cooker! For vegans, you can omit the egg and increase the mashed bananas. You'll love this bread no matter how you make it. Happy baking in your rice cooker!

EASY RICE COOKER CAKE RECIPES: Zucchini Banana Nut Bread

INGREDIENTS:
• 1 cup (150g) SHREDDED ZUCCHINI, about 1 to 1 1/4 cup
• 1 1/2 cup (210g) UN-BLEACHED ALL PURPOSE FLOUR
• 1 cup (200g) SUGAR
• 1 tsp (3g) CINNAMON
• 1/2 tsp (2g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp (4g) SALT
• 1 cup (300g) MASHED BANANAS, about 4 medium
• 1 EGG, for vegan, omit egg and increase bananas to 1 1/4 cup (375g)
• 1/3 cup (72g) COCONUT OIL
• 1 tsp (4.2g) VANILLA EXTRACT
• 1/2 cup (65g) CHOPPED PECANS, or walnuts

HOW TO:
1. Shred 2 medium zucchinis to make 1 to 1 and 1/4 cup
2. In a bowl, mix flour, sugar, cinnamon, baking powder, baking soda and salt
3. In a large mixing bowl, mix mashed bananas, egg, coconut oil and vanilla extract until combined
4. Add flour mixture into wet ingredient and mix to incorporate
5. Fold in shredded zucchini and chopped pecans with a spatula until combined
6. Lined rice cooker with baking paper and carefully pour in your batter
7. Bake for 4 COOK cycles (about 2 hours), or until chopstick or toothpick comes out clean
8. Cool for 20-30 minutes before cutting

OVEN BAKING:
1. Grease pan
2. Bake at 325F (160C) for 45-60 minutes or until chopstick or toothpick comes out clean
