EASY RICE COOKER CAKE RECIPES: Why I Bake in My Rice Cooker (Banana Raisin Bread)

INGREDIENTS:
• 3 MASHED BANANAS, med or large
• 1/2 cup (115g) UNSALTED BUTTER, at room temperature
• 1/2 cup (160g) HONEY, or 3/4 cup white sugar
• 1 tsp (3g) CINNAMON
• 2 EGGS
• 1 1/2 cups (220g) ALL PURPOSE FLOUR
• 1 tsp (7g) BAKING SODA
• 1/2 tsp (3g) SALT
• 1/2 tsp (2g) VANILLA EXTRACT
• 1 cup (45g) CHOPPED WALNUTS
• 1 cup (150g) RAISINS AND CRANBERRIES

HOW TO:
1. In a bowl, whisk together flour, baking soda and salt
2. In separate bowl, mashed 3 bananas with fork
3. In a mixing bowl, cream together butter and honey or sugar
4. Add 2 eggs, mashed bananas, vanilla and mix until blended
5. Add dry ingredients to mixture
6. Add raisins, cranberries and chopped walnuts, mix until combined
7. Spray rice cooker with non-stick spray or with butter
8. Bake cake for 3 cook cycles or until chopstick or toothpick comes clean
9. Let cake cool for 30 minutes before serving
10. Turn cake upside down onto plate then right side up

OVEN BAKING:
If you want to bake it:
* Bake at 350°F (175°C) for 55-60 min or until a toothpick inserted into the center comes out clean. Let banana bread rest for 10 min before transferring to wire rack to cool.
