This recipe is keto friendly and gluten free! This version is more wet and more like a bar then other drier versions due to the almond flour used. Also, this recipe is not very sweet, just the way I like it. If you like it sweeter? Double the sweetener. Happy baking in your rice cooker.

EASY RICE COOKER CAKE RECIPES: Keto and Gluten-Free Chocolate Brownie Bar

INGREDIENTS:
• 3/4 cup or 200 grams UNSALTED BUTTER
• 1/2 cup 100 grams DARK CHOCOLATE (74% or higher)
• 4 small or 3 large ORGANIC EGGS
• 1 tsp or 4 grams PURE VANILLA
• Pinch of SALT
• 1/4 cup or 50 grams PURE FINE SUGAR (or any other sweetener)
• 1/2 cup or 50 grams ALMOND FLOUR

HOW TO:
1. Melt butter and chocolate in the microwave for 60-90 seconds or over low heat in a pot or melt it in your rice cooker. I just want to show various options for people here.
2. In mixing bowl, mix eggs, vanilla extract, salt and sugar
3. Pour chocolate mixture into egg mixture and mix to combined
4. Fold in almond flour until combined
5. Grease baking paper with butter and place inside of rice cooker pot, flatten as much as possible
6. Carefully pour batter into rice cooker pot, staying inside of the baking paper
7. Bake for 2 cycles, about 1 hour
8. Let it cool for 2 hours or overnight in the refrigerator before cutting

BONUS:
If baking in an oven, pre-heat oven to 350F or 180C and bake it for 20-30 minutes or until done.
